  • ..+舌尖上的节气 | 今日立冬,支铜锅涮羊肉 “立冬”节气(Start of Winter)并非气象学上冬季的开始。我国幅员辽阔,北部的漠河及大兴安岭以北地区,9月上旬就早已进入冬季,10月下旬首都北京也已一派冬天景象,而长江流域的冬季要到“小雪”节气前后才真正开始。 立冬与立春、立夏、立秋合称“四立”,有“迎冬”“补冬”等习俗。劳动了一年的人们,立冬这天要休息一下,犒赏家人一年来的辛苦。 The four beginnings of the seasons were important festivals in ancient times. Start of Winter is a time when the harvest of the year prompts people to have the most sense of accomplishment, and it is also a time when they can relax and reward themselves. 北方人热衷吃涮羊肉。铜锅加入枸杞、姜片、葱段等,炭火烧得锅里清汤滚热,夹着红白相间、薄而不散的羊肉片在汤里一涮,肉色一白再放在冷麻酱料里一蘸。入口即化,肉香四溢。 For most northerners, Start of Winter is never complete without the classic copper hot pot. Blanching a few slices of lamb as thin as cicada wings into the clarified soup base with floating wolfberries. After the slices gradually curl up, a gourmet would dip them into a bowl of some specially made sesame sauce, fermented bean curd and mashed leek paste to complement an incredibly flavorful dish in every way.
